Details about this class

This is a fully online course. There are no required weekly Zoom sessions. However, I have weekly (optional) virtual office hours, and am always available to schedule individual Zoom or phone meetings with students.

The prerequisites for this course have changed to the below. If you need any override please do reach out to me at: estefania.herrera@pcc.edu. If you reach out to me for an override, please provide me with your G number.

Does this course have prerequisites?

Yes, IRW 115 or (WR 115 and RD 115), and (MTH 65 or MTH 98) or equivalent placement; and BI 112 or cellular biology equivalent. 

Who is my instructor?

I am Estefania Herrera (she/they) a Latina Registered Dietitian Nutritionist (RDNs) with a Masters in Nutrition Sciences. Born and raised in Mexico, immigrated to U.S to Las Vegas Nevada in 2012, and moved to Oregon about 2 years ago. I am married to a fellow Registered Dietitian & musician, we recently had a baby girl. Currently, I am pursuing a Ph.D in Public Health focused on Community Health at OHSU-PSU (I am taking a LOA). My main expertise is Cultural Responsive Care, thus I like to approach nutrition from a trauma-informed and social justice lens with some sparkles of mindfulness. 

My teaching philosophy:

To create opportunities for you to grow as individuals, professionals and citizens of the world. Our time together is designed to challenge our current mindset, and evaluate our own limiting beliefs that impair growth. Our space is expected to stimulate an inclusive and creative learning environment by accounting for the different learning styles and advocating collaboration, communication, critical thinking, and creativity. 

My Health & Nutrition philosophy: 

My professional opinon is build on two premises: healthy people and healthy systems. We cannot have one without the other. For this course we will explore a lot of nutrition information in conjunction with learning how to navigate health beliefs, health behaviors, and health systems.

For this class you will need access to a device that allows you to review material & complete digital work in D2L. This course is cross-listed as FN 225 20019 & 26928, this means that students can register either and the class itself will be the same. 

No show policy

Your instructor can mark you as a "no show" if you do not participate in your class during the first week. This will remove you from the class. It is important to log in as soon as the class starts to see what the participation requirements are.
